Koyo pottery studio is one of the few studios that can produce daily-use Shino-style dish ware (or “Utsuwa”). In order to do this, Koyo pottery must make its own homemade pottery clay, for it is very difficult to formulate a glaze and clay that are compatible with each other. It was only after great trial and error that Mr. Kato was able to craft these “Utsuwa”.Shino is one of the ceramics that is original to Japan. The unique glazing and firing techniques of Shino allow the colors to shine while giving a delicate balance and allure to Japanese cuisine.
The history of Shino-ware began when a tea master named Soushin Shino from the Muromachi period (1392-1573) commissioned potters from the region of Mino to create stoneware of white (or feldspathic) glaze. In Mino, it is said that Haku-tenmoku,Soushin Shino’s favorite tea bowl, was fired in the old kiln of Toki city during mid-Muromachi period. However, in the Momoyama period(1568-1600), this style was gradually replaced by underglaze decoration in iron oxide, which was a method unique to Japan. During that period in Kani-cho, national treasure Kaki/Shou. Other famous Shino-ware such as Hashie, Aka-Shino, Nezumi-Shino were produced in the old kiln of Toki city.First thought to have originated in the Seto region, Shino-ware was actually manufactured in Mino upon Toyozo Arakawa’s discovery of bamboo tube kiln fragments in Ogaya.
The Koyo pottery studio has been firing Shino-ware since 1963 using handmade clay and select ingredients. We strive to produce high quality Utsuwa dinnerware products and delight our customers by adding a modern twist to tradition.
